The Art of Eating
Traditional Chinese cooking is healthy. Cooking methods include steaming, to preserve the natural taste, wok cooking (ts'ai kuo) which uses a tiny amount of oil for texture and flavor, and roasting to bring out richness in meats. Another healthy aspect of Chinese cooking is the small bite size portions. Since knives at the dinner table were considered impolite, not to mention a potential threat to an emperor's life, food was always served pre-cut into pieces that could be picked up with chopsticks. Yin-yang, the Chinese philosophy pf harmony and balance, also plays a key role in Chinese cuisine. Food must be a healthy balance of taste, texture and color. Ginger has returned to the roots of authentic Chinese cuisine by using only the freshest ingredients (no preservatives or msg) and traditional cooking methods. As the Chinese say, "Good Eating!"
Chow-Chow
ChowChow Thought to have been brought to America by the Chinese railroad laborers, chow-chow is a mustard-flavored mixed-vegetable-and-pickle relish. Originally, the term was used to describe a Chinese condiment of orange peel and ginger in a heavy syrup. Ginger's chow chow are presented to you as four sauces: plum, ginger low sodium soy, Chinese mustard and Szechwan chili garlic.
